Strawberry Chocolate Chip Bread Ingredients

White whole wheat flour – This flour gives structure and holds the bread together. It also adds a nutty taste and some whole grains for fiber. 

Greek yogurt – The yogurt adds moisture so the bread stays soft. It also makes the texture tender inside. 

Vanilla – Vanilla has a sweet smell and flavor. It makes the bread taste better overall.  

Coconut oil – Coconut oil keeps the bread moist. It helps the inside stay soft instead of getting hard.

Strawberries – Fresh strawberries add sweet fruit taste and juice. They also keep the bread moist and give pieces of fruit.

Chocolate chunks – Small chocolate pieces melt inside the bread for pockets of creamy chocolatey bites in each part. They go well with the sweet strawberries.

How I Made Strawberry Chocolate Chip Bread

I started by preheating my oven and greasing a loaf pan. In a large bowl, I mixed together the flour, baking powder and salt. This helped give the bread structure. 

In a separate bowl, I whisked some eggs together before adding Greek yogurt, sugar and vanilla extract. I melted some coconut oil and mixed it in too until smooth. 

Gradually, I poured the wet ingredients into the dry and stirred it all together until just blended. Then I gently folded in chopped strawberries and mini chocolate chips. 

The batter went into the prepared pan. I was excited to see the pink and chocolate chunks throughout! Into the oven it went. 

After about 55 minutes, when a toothpick came out clean, it was done.

How To Store 

Keep the Strawberry Chocolate Chip Bread in a sealed container. You can leave it out at room temperature for one day or store it in the fridge for up to five days.

Ingredients
  

  • 1 cup white whole wheat flour
  • 1.5 tsp baking powder
  • 1/8 tsp salt
  • 2/3 cup greek yogurt plain
  • 2/3 cup sugar
  • 2 large eggs, whisked
  • 3/4 tsp vanilla
  • 1/3 cup coconut oil, melted
  • 2/3 cup strawberries, diced
  • 1/3 cup chocolate chunks + more for toppings

Instructions
 

  • Preheat the oven to 350°F and prepare a loaf pan by greasing it with butter or oil.
  • In a large bowl, combine the white whole wheat flour, baking powder, and salt. Mix well and set aside.
  • In another bowl, beat the eggs, then add the Greek yogurt, sugar, vanilla extract, and melted coconut oil. Mix until smooth.
  • Gradually pour the wet ingredients into the dry ingredients, stirring until the batter is well mixed and smooth.
  • Gently fold in the diced strawberries and chocolate chunks until evenly distributed in the batter.
  • Pour the batter into the prepared loaf pan, spreading it out evenly.
  • Bake in the preheated oven for about 55 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for at least 10 minutes before transferring it to a wire rack to cool completely.
