Ingredients
  

  • 1 cup white whole wheat flour
  • 1.5 tsp baking powder
  • 1/8 tsp salt
  • 2/3 cup greek yogurt plain
  • 2/3 cup sugar
  • 2 large eggs, whisked
  • 3/4 tsp vanilla
  • 1/3 cup coconut oil, melted
  • 2/3 cup strawberries, diced
  • 1/3 cup chocolate chunks + more for toppings

Instructions
 

  • Preheat the oven to 350°F and prepare a loaf pan by greasing it with butter or oil.
  • In a large bowl, combine the white whole wheat flour, baking powder, and salt. Mix well and set aside.
  • In another bowl, beat the eggs, then add the Greek yogurt, sugar, vanilla extract, and melted coconut oil. Mix until smooth.
  • Gradually pour the wet ingredients into the dry ingredients, stirring until the batter is well mixed and smooth.
  • Gently fold in the diced strawberries and chocolate chunks until evenly distributed in the batter.
  • Pour the batter into the prepared loaf pan, spreading it out evenly.
  • Bake in the preheated oven for about 55 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for at least 10 minutes before transferring it to a wire rack to cool completely.
