Strawberry Banana Cake

Strawberry Banana Cake Ingredients 

  • All purpose flour
  • Baking soda
  • Baking powder
  • Cinnamon

  • 1 large banana
  • Diced strawberries 
  • Lemon juice
  • Brown sugar
  • White sugar
  • Buttermilk 
  • Softened butter
  • Egg
  • Vanilla

How To Make Banana Strawberry Cake 

Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper or coat with nonstick spray. 

In a medium bowl, mash the bananas with lemon juice. Cut the strawberries into small pieces and add them to the bananas. Mix them together gently.

In a large bowl, beat butter and sugar with a mixer until light and fluffy. Add egg and vanilla, mixing on high speed. 

Sift dry ingredients into a separate bowl. Alternately add flour mixture and buttermilk to wet ingredients, mixing just until combined. 

Gently mix the bananas and strawberries into the batter using a spatula, making sure to keep the fruit chunks whole.

Transfer batter to prepared pan. Bake for 40 minutes or until a toothpick comes out clean, checking at 35 minutes to avoid overbaking. 

Once finished, cover the cake with plastic wrap and freeze the pan for 45 minutes for an extra moist texture. Alternatively, cool fully on a wire rack before frosting.

Cream Cheese Frosting 

Most people enjoy frosting, but some don’t. Personally, I really like frosting, so if you do too, you should definitely make this cake with frosting. I suggest trying cream cheese icing because it always tastes great with this type of cake. I haven’t tried it without icing.

How To Make Cream Cheese Frosting 

Combine the powdered sugar and cream cheese in a medium bowl. Use an electric hand mixer to blend the ingredients thoroughly. 

Once the sugar and cream cheese have fully combined, slowly incorporate the heavy cream into the mixture. Continue mixing as the cream is added. 

Stir in the vanilla once the heavy cream has been blended into the frosting. Mix until smooth and creamy. 

When the cake has cooled, apply the fluffy frosting to the top and sides using a spatula or knife.
