Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions
 

Step 1: Prepare the Baking Pan

  • Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper or grease it with nonstick spray.

Step 2: Mash Bananas & Prepare Strawberries

  • In a medium bowl, mash the ripe banana with lemon juice to prevent browning.
  • Dice the strawberries into small pieces and gently fold them into the banana mixture.

Step 3: Cream Butter & Sugar

  • In a large mixing bowl, beat butter, brown sugar, and white sugar with an electric mixer on medium speed until light and fluffy.
  • Add the egg and vanilla extract, mixing on high speed until fully incorporated.

Step 4: Combine Dry & Wet Ingredients

  • Sift together flour, baking soda, baking powder, cinnamon, and salt in a separate bowl.
  • Alternately add flour mixture and buttermilk to the wet ingredients, mixing gently until just combined.
  • Fold in the banana and strawberry mixture with a spatula, being careful not to overmix.

Step 5: Bake the Cake

  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 35-40 minutes, checking at 35 minutes with a toothpick inserted into the center. If it comes out clean, the cake is ready.
  • For extra moisture, cover the cake with plastic wrap and freeze for 45 minutes after baking. Alternatively, let it cool completely before frosting.
