  • 1 kg 2 lbs fresh strawberries, hulled and sliced if large
  • 2-3 tablespoons cornstarch or cornflour
  • 1/3 to 1/2 cup white sugar depending on sweetness of berries
  • 2 tablespoons water
  • 1 teaspoon vanilla extract

Crumble Topping

  • 3/4 cup rolled oats
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar loosely packed
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • Pinch of salt
  • 90 g 6 tbsp unsalted butter, melted

Instructions
 

Preheat the Oven:

  • Heat your oven to 350°F (180°C).

Prepare the Strawberry Filling:

  • Place the sliced strawberries in a large bowl.
  • Sprinkle them with cornstarch and toss to ensure they're evenly coated.
  • Add the sugar, water, and vanilla extract. Mix thoroughly.

Make the Crumble Topping:

  • In a separate bowl, mix together the oats, flour, brown sugar, baking powder, cinnamon, and salt.
  • Pour in the melted butter and use a fork to blend until the mixture becomes crumbly with some larger chunks.

Assemble the Crumble:

  • Transfer the strawberry mixture to a baking dish.
  • Sprinkle the crumble topping evenly over the strawberries, using your fingers to create some larger crumbs.

Bake:

  • Bake for 30-40 minutes, or until the top is golden brown and the strawberry juices are bubbling around the edges.
