French Onion Soup Rice

- 1 cup uncooked long grain white rice
- 4 cups beef broth
- 1 can 10.5 oz French onion soup
- 2 tablespoons butter
- 2 large onions thinly sliced
- Salt and pepper to taste
- 1/2 cup shredded Gruyère or Swiss cheese optional
- Fresh parsley chopped (for garnish)
- Croutons optional, for serving
Caramelize the Onions:
In a large skillet or saucepan over medium heat, melt the butter. Add the sliced onions and cook slowly, stirring occasionally, for 15–20 minutes until they're soft and deeply golden brown.
Simmer:
Reduce heat to low, cover, and let it simmer for 18–20 minutes, or until the rice is tender and the liquid is fully absorbed.
Top and Serve:
Once the rice is done, top with shredded Gruyère or Swiss cheese (you can melt it under a broiler for a minute or two if desired). Sprinkle with chopped fresh parsley and add croutons for a crunchy, soup-inspired finish.
