French Onion Soup Rice

Ingredients
  

  • 1 cup uncooked long grain white rice
  • 4 cups beef broth
  • 1 can 10.5 oz French onion soup
  • 2 tablespoons butter
  • 2 large onions thinly sliced
  • Salt and pepper to taste
  • 1/2 cup shredded Gruyère or Swiss cheese optional
  • Fresh parsley chopped (for garnish)
  • Croutons optional, for serving

Instructions
 

Caramelize the Onions:

  • In a large skillet or saucepan over medium heat, melt the butter. Add the sliced onions and cook slowly, stirring occasionally, for 15–20 minutes until they're soft and deeply golden brown.

Add Rice and Liquids:

  • Stir in the uncooked rice, coating it in the onion mixture. Pour in the beef broth and French onion soup. Season with a pinch of salt and pepper. Bring to a gentle boil.

Simmer:

  • Reduce heat to low, cover, and let it simmer for 18–20 minutes, or until the rice is tender and the liquid is fully absorbed.

Top and Serve:

  • Once the rice is done, top with shredded Gruyère or Swiss cheese (you can melt it under a broiler for a minute or two if desired). Sprinkle with chopped fresh parsley and add croutons for a crunchy, soup-inspired finish.
