Prepare the Sauce: In a medium saucepan, melt 5 tbsp butter over medium heat.
Add 1 tbsp chopped fresh sage and sauté for 30 seconds until fragrant.
Whisk in 5 tbsp all-purpose flour, stirring constantly for 1–2 minutes until it turns a light golden color.
Add Liquids and Cheese: Slowly pour in 1 cup milk, 1 cup heavy cream, and 1 cup low-sodium chicken broth, whisking continuously to avoid lumps.
Add 3 tbsp dry sherry (or chicken broth), 1 pinch of nutmeg, 1 tsp salt, and freshly ground black pepper to taste.
Stir in 1 ½ cups shredded Gruyere cheese, mixing until the cheese is fully melted and the sauce is smooth.
Assemble the Casserole: In a large bowl, combine cooked chicken and cooked broccoli.
Pour the creamy cheese sauce over the mixture and stir until well combined.
Transfer the mixture to the prepared casserole dish and spread evenly.
Top and Bake: Sprinkle the top with ½ cup grated Parmesan cheese, ½ cup toasted sliced almonds, and ¼ cup breadcrumbs.
