Banana Fudge

Banana fudge is known for its rich, creamy texture and intense banana taste. Complementary ingredients like peanut butter, coconut oil or white chocolate chips are added. These provide contrasting elements that create more complexity while also contributing moisture.

Ingredients

  • 1/2 lb butter
  • 3 cups brown sugar
  • 2/3 cup evaporated milk
  • 3 tsp banana extract
  • 2 1/2 cups icing sugar
  • 10 vanilla wafers

Instructions

  • In a pan over low heat, melt white chocolate chips, butter, and sweetened condensed milk together.
  • Once fully melted and smooth, this mixture is poured atop the pre-made banana fudge layer below. Then, spreading it out gently achieves an even coating.
  • Following this, Nilla wafer cookie chunks are sprinkled across the top white chocolate layer.
  • Finally, after allowing sufficient time for proper setting, which takes around 4 to 6 hours, the fudge can be cut into squares and enjoyed.

Notes

Using bananas fully ripened brings out natural sweetness, so select fruit completely speckled and soft. Underripe bananas risk an insufficiently sweet final product.
Next, thorough blending is key – don’t skimp on mixing, which incorporates ingredients homogenously. This step cannot be overdone but under-mixing leads to unsatisfactory results.
Furthermore, take time to let the mixture set properly through chilling. A minimum of the recommended duration refines texture. But ideally an overnight chill brings out flavors best.
Moreover, experimenting expands options. Altering add-ins provides opportunities for fun discovery. Nut butters, pudding mixes and more encourage new favorites.
Lastly, consider a silicon muffin tin as an alternative to standard tins, easing unmolding of bite-sized portions. Simple solutions polish the finished product.
