Ingredients

  • 1 cup almond flour
  • 2 large eggs
  • 2 tablespoons milk dairy or plant-based, like almond milk

Instructions

Prepare the batter

  • In a medium-sized mixing bowl, whisk together the almond flour and eggs until smooth.
  • Gradually add the milk while stirring to create a slightly thick but pourable batter.

Preheat the pan

  • Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a bit of butter, coconut oil, or non-stick spray to prevent sticking.

Cook the pancakes

  • Using a ¼-cup measuring cup, pour the batter onto the skillet to form small pancakes. Almond flour pancakes tend to be delicate, so keep them small for easy flipping.
  • Cook for about 2–3 minutes on the first side, or until bubbles form on the surface and the edges look set.
  • Flip gently and cook for an additional 1–2 minutes on the other side, until golden brown and cooked through.

Serve and enjoy

  • Transfer the pancakes to a plate and enjoy them while they’re warm. Pair them with maple syrup, fresh fruits, or a spoonful of yogurt for a delightful finishing touch.

Notes

Tips

  • If the batter feels too thick, add an extra tablespoon of milk to thin it out.
  • Keep the heat at medium or medium-low to ensure even cooking without burning.
  • These pancakes are naturally sweet without added sugar, but you can mix in a dash of vanilla extract or a pinch of cinnamon for extra flavor.
