You can use fresh strawberries or freeze-dried strawberries. I chose fresh strawberries because they provide a strong flavor and a soft frosting. If you use freeze-dried strawberries, your frosting will be light pink in color.

How To Make Vegan Strawberry Frosting
Step 1: Prepare the Vegan Butter
Softening the Butter:
Place the vegan butter in a mixing bowl. It should be soft but not melted to ensure the right consistency. Use an electric mixer on medium speed for 2-3 minutes until the butter is fluffy and pale. Softening it properly is key to achieving a light, creamy frosting.
Step 2: Make and Incorporate the Strawberry Puree
Making Strawberry Puree:
In a food processor or blender, combine fresh or thawed frozen strawberries with a small amount of sugar (optional, to enhance sweetness). Blend until smooth. If you prefer a seedless puree, strain it through a fine mesh sieve.
Freeze-Dried Strawberries Option:
If using freeze-dried strawberries for an extra punch of flavor and vibrant color, grind them into a fine powder using a spice grinder or blender. Freeze-dried strawberries are naturally more concentrated, enhancing the frosting’s strawberry essence.
Mixing the Puree:
Add 2-3 tablespoons of strawberry puree (or freeze-dried powder) to the whipped butter. Beat on medium speed until the puree is fully incorporated.
Step 3: Add Powdered Sugar Gradually
Sift the Sugar:
Sift organic powdered sugar to remove clumps and achieve a smooth frosting. This step is crucial for a silky texture.
Mix Gradually:
Add powdered sugar in small batches (about 28 grams at a time). Mix on low speed initially to avoid a sugar cloud, then increase the speed once incorporated. Continue until the frosting reaches your desired sweetness and consistency. Aim for a thick yet spreadable texture.
Step 4: Adjust Consistency (If Needed)
If the frosting is too thick, add a teaspoon of strawberry puree or plant-based milk (like almond or oat milk) to thin it.
If it’s too thin, add more sifted powdered sugar, a little at a time.
