Vegan Mexican Pizza

This  vegan Mexican pizza  is made with fire-roasted crushed tomatoes or salsa, refried beans, vegan roasted jalapeño cheese and topped with avocado, crushed corn tortillas, and garnished with cilantro and scallion greens.

Ingredients

  • 1 large pizza dough  350 grams (approximately 12.5 ounces
  • 1 cup fire-roasted crushed tomatoes or salsa
  • 1 cup refried beans
  • 1 cup vegan roasted jalapeño cheese
  • 1 red onion, diced
  • 1 scallions, sliced (whites and green parts divided)
  • 1 jalapeños, thinly sliced
  • 1 roma tomatoes, diced
  • 1 avocado, diced
  • Half cup crushed corn tortillas
  • Fresh cilantro, for garnish
  • Hot sauce, to serve

How To Make Vegan Mexican Pizza

  1. Preheat the oven to 475°F (245°C).
  2. Roll out the pizza dough on a floured surface to your desired thickness.
  3. Transfer the dough to a pizza stone or baking sheet lined with parchment paper.
  4. Spread an even layer of fire-roasted crushed tomatoes or salsa over the dough, leaving a small border.
  5. Spread the refried beans over the tomato base, smoothing it out.
  6. Evenly distribute the vegan roasted jalapeño cheese across the pizza.
  7. Add diced red onions, scallion whites, jalapeños, and roma tomatoes on top of the cheese.
  8. Bake the pizza in the preheated oven for 12-15 minutes, or until the edges are golden brown and the cheese is melted.
  9. Remove from the oven and let it cool for a minute.
  10. Top with avocado, crushed corn tortillas, and garnish with cilantro and scallion greens.
  11. Slice and serve with hot sauce on the side. Enjoy!
