Sweet Potato Pineapple Casserole

The sweet potato pineapple casserole is yummy and sweet. It mixes sweet potatoes’ natural sweetness with pineapple’s tangy flavor, giving it a special and tasty taste. Adding butter, sugar, pecans, and marshmallows makes it even better. People like to have it on special occasions and holidays. Mixing mashed sweet potatoes and pineapple with other ingredients makes a tasty side dish.

Sweet Potato Pineapple Casserole Ingredients 

Sweet Potatoes 

 provide the starchy and sweet base. Peel and dice the sweet potatoes.

Crushed pineapple with juice 

Adds a sweet and tangy flavor. It also helps keep the casserole moist. 

Light brown sugar

 Enhances the sweetness and caramelization of the potatoes. Add brown sugar to taste.

Butter 

Adds richness and creamy smoothness. Dice and mix in butter.

Salt

 Balances the sweet flavors and brings out the natural tastes. Add a pinch of salt.

How To  Make Sweet Potato Pineapple Casserole 

– First, preheat the oven to 350°F to get it nice and warm. 

– Then, peel the sweet potatoes and cut them into 2-inch cubes so they’re evenly sized. 

– Next, in a large mixing bowl, combine the diced sweet potatoes with the crushed pineapple (including the juice). 

– Also add the light brown sugar and melted butter to the bowl. 

– Stir everything together thoroughly so that the sweet potato and pineapple pieces are evenly coated.

– Once mixed, transfer the sweet and tart mixture into a greased casserole dish.

– Place the dish in the oven and bake for about 45-50 minutes. 

– Finally, check if the sweet potatoes are tender by piercing with a fork. 

– Once tender, remove the casserole from the oven and enjoyment! Serve the warm casserole right away.

Ingredients 

3 sweet potatoes Approximately 2 pounds

½ cup crushed pineapple with juice

¼ cup packed light brown sugar

3 tablespoons butter, melted

Salt: To taste
