How I Made Strawberry Coconut Balls 

In the food processor, I blended together chopped strawberries, shredded coconut, almond flour, honey and a splash of vanilla until it formed a smooth dough. 

Using a small cookie scoop, I portioned out ball-sized amounts and rolled them between my hands. Then I rolled each one in extra coconut flakes until coated.

I placed the balls on a parchment lined baking sheet and popped it in the fridge to firm up for an hour. The coconut layers kept their shape once chilled.

After trying one, I was impressed by the fresh berry flavor and crunchy texture. These no-bake energy bites were the perfect portable snack. 

Throughout the week, I kept the remaining balls in an airtight container in the fridge. They stayed fresh and made a great grab-and-go breakfast on busy mornings. 

Next time, I may add pistachios or dark chocolate chips. But the simple ingredients in this recipe were plenty delicious on their own!

How To Store

Place the balls in an airtight container and store in the fridge.This prevents drying out and absorbing odors from other fridge foods.This cool temperature will prevent spoiling.Properly refrigerated, these treats should stay fresh and tasty for around 7 days.Take the balls out of the fridge 30 minutes before serving to bring to room temperature.   • 2 cups fresh strawberries, hulled and chopped

  • 1/2 cup almond flour
  • 1/2 cup honey or maple syrup
  • 1/2 tsp vanilla extract

Instructions
 

  • Put chopped strawberries, shredded coconut, almond flour, honey or maple syrup, vanilla extract, and salt in a food processor. Mix until smooth.
  • Use a small cookie scoop or a tablespoon to make balls from the mixture.
  • Roll each ball in more shredded coconut.
  • Put the balls on a baking sheet lined with parchment paper.
  • Put them in the fridge for at least 1 hour, until they are firm.
  • Keep the strawberry coconut balls in a closed container in the fridge for up to 5 days.
