- 4 cups 600g cubed seedless watermelon, chilled
- 1/2 cup 100g granulated sugar
- 2 tablespoons fresh lime juice
Prepare the Watermelon:
Wash the watermelon and cut it in half.
Scoop out the seeds and cut the watermelon flesh into 1-inch cubes.
Spread the cubes in a single layer on a baking sheet.
Freeze the watermelon cubes for at least 2 hours or until they are completely frozen.
Make the Sorbet Base:
In a small pot, mix the sugar with 1/4 cup of water.
Heat over medium, stirring occasionally, until the sugar dissolves.
Remove from heat and let the syrup cool completely.
Blend the Sorbet:
Place the frozen watermelon cubes, cooled sugar syrup, and lime juice in a blender or food processor.
