Watermelon Popsicles

- 4 cups 600g cubed seedless watermelon, chilled
- 1/4 cup 60ml freshly squeezed lime juice (about 2-3 limes)
- 2 tablespoons 25g granulated sugar (or honey/agave, to taste)
- 1/4 teaspoon salt
Prepare the Watermelon:
Wash the watermelon, slice it in half, and scoop out the seeds.
Cut the watermelon into 1-inch cubes and add them to a blender or food processor.
Create the Popsicle Mixture:
Pour in the lime juice, and add sugar (or honey/agave) and a pinch of salt.
Blend everything on high speed for 1-2 minutes until the mixture is smooth and uniform.
Fill and Freeze:
Carefully pour the blended watermelon mixture into popsicle molds, leaving a small gap at the top.
Insert the popsicle sticks into each mold.
Remove and Enjoy:
To release the popsicles, run warm water over the molds for 30 seconds to 1 minute.
Gently pull out the popsicles and enjoy them immediately.
