Ingredients
  

  • 2 cans 400 ml each full-fat coconut cream (chilled)
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 2 –3 cups strawberries sliced
  • 3 medium bananas sliced
  • 250 –300g vegan biscuits or graham crackers
  • 1 tbsp lemon juice optional

Instructions
 

  • Whip chilled coconut cream with maple syrup and vanilla until fluffy.
  • Slice strawberries and bananas evenly.
  • Layer biscuits, cream, and fruit in a dish.
  • Repeat layers until filled, finishing with cream on top.
  • Chill for at least 6 hours or overnight.
  • Slice and serve cold for best texture.
