Ingredients
  

  • ¾ cup dry orzo about 1½ cups cooked
  • –2 cups cherry tomatoes halved
  • ¾ cup feta cheese crumbled
  • ½ cup fresh basil leaves torn
  • 3 –4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 garlic clove minced (optional)
  • Salt and pepper to taste

Instructions
 

  • Cook orzo in salted water until al dente, then drain and cool.
  • In a bowl, whisk olive oil, lemon juice, garlic, salt, and pepper.
  • Combine orzo, tomatoes, and feta in a large bowl.
  • Pour dressing over and toss gently.
  • Add fresh basil and mix lightly.
  • Adjust seasoning and serve at room temperature or chilled.
