- ¾ cup dry orzo about 1½ cups cooked
- 1½ –2 cups cherry tomatoes halved
- ¾ cup feta cheese crumbled
- ½ cup fresh basil leaves torn
- 3 –4 tbsp olive oil
- 2 tbsp lemon juice
- 1 garlic clove minced (optional)
- Salt and pepper to taste
Cook orzo in salted water until al dente, then drain and cool.
In a bowl, whisk olive oil, lemon juice, garlic, salt, and pepper.
Combine orzo, tomatoes, and feta in a large bowl.
Pour dressing over and toss gently.
Add fresh basil and mix lightly.
