- 2 cups cooked mashed sweet potatoes about 2 large sweet potatoes
- 3 large eggs beaten
- 1 cup grated Parmesan cheese or nutritional yeast for a dairy-free option
- 2 tablespoons fresh rosemary chopped
- 1/4 cup cooked bacon diced (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Sour cream or plain Greek yogurt for serving, optional
If you haven’t prepared the mashed sweet potatoes yet, start by placing cubed sweet potatoes into a large pot and covering them with water. Bring the water to a boil and cook the sweet potatoes for 15-20 minutes, or until they are tender when pierced with a fork. Once cooked, drain the sweet potatoes and mash them using a masher, fork, or food processor.
Set your oven to 400°F and position a rack in the center. Prepare a mini-muffin tin by giving it a light coating of cooking spray, then set it aside.
In a spacious bowl, mix the mashed sweet potatoes with eggs, ¾ cup of grated Parmesan cheese, rosemary, bacon, salt, and pepper until well combined.
Spoon the sweet potato mixture into each muffin cup, filling them to the brim. Top each with the remaining ¼ cup of Parmesan cheese.
Bake the sweet potato puffs for approximately 20 minutes, or until they are firm and golden brown on top. Allow them to cool in the pan for about 5 minutes, then carefully loosen each puff with a spoon or knife. Serve right away, topped with sour cream or plain Greek yogurt if you like.
