- 2 medium sweet potatoes 500-600 g, diced
- 1 tbsp olive oil
- 300 g lean ground beef
- 1 tsp garlic powder divided
- 1 tsp smoked paprika divided
- ½ tsp onion powder
- ½ tsp black pepper divided
- Salt to taste
- 2 cups shredded romaine or iceberg lettuce
- 1 medium tomato diced
- ¼ medium red onion thinly sliced
- 4-6 dill pickle slices
- ¼ cup shredded cheddar cheese
- 2 tbsp plain Greek yogurt
- 2 tbsp mayonnaise
- 1 tsp ketchup
- 1 tsp yellow mustard
- 1 tsp fresh lemon juice
Roast the sweet potatoes. Preheat the oven to 425°F (220°C). Toss the diced potatoes with olive oil, half the garlic powder, half the paprika, and salt and pepper. Roast for 25-30 minutes, turning halfway through.
Cook the beef. Brown the ground beef in a skillet over medium-high heat for 7-10 minutes. Drain excess fat if needed and season with the remaining garlic powder, paprika, onion powder, salt, and pepper. Cook to 160°F (71°C).
Mix the sauce. Whisk together Greek yogurt, mayonnaise, ketchup, mustard, and lemon juice until smooth.
Prepare the toppings. Shred the lettuce, dice the tomato, slice the onion, and drain the pickles.
Assemble the bowls. Divide the sweet potatoes and beef between two bowls. Add the vegetables, pickles, and cheddar.
Finish and serve. Drizzle with burger sauce and serve while the sweet potatoes are warm.
