- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
Strawberry Frosting:
- ½ cup unsalted butter softened
- 2 cups powdered sugar
- 1 cup finely mashed fresh strawberries
- 1–2 tablespoons heavy cream as needed
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream butter and sugar until fluffy. Mix in egg, lemon zest, and lemon juice.
Whisk flour, baking powder, and salt separately, then mix into wet ingredients until combined.
