  • 2 ½ cups all-purpose flour

  • 3 large eggs at room temperature
  • 1 ¾ cups sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract

For the Cream Cheese Frosting

  • 8 ounces cream cheese softened
  • 2 cups powdered sugar sifted
  • ½ cup butter 1 stick, softened
  • 1 teaspoon vanilla extract

Notes on Ingredient Quantities

  • If using fresh strawberries, wash, hull, and either dice or puree them.

Step 2: Make the Batter

  • Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
  • In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and a pinch of salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with the strawberry puree or jam. Mix until just combined—avoid overmixing to keep the cake tender.
  • Fold in any optional add-ins like lemon zest or chocolate chips.

Step 3: Bake the Cake

  • Pour the batter into the prepared bundt pan, spreading it evenly. Tap the pan gently on the counter to remove air bubbles.
  • Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10–15 minutes, then carefully invert it onto a wire rack to cool completely.
