- 2 cups cooked pasta fusilli or penne
- 1 cup fresh strawberries sliced
- 2 cups baby spinach
- ½ cup goat cheese crumbled
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
- ¼ cup toasted walnuts Optional
- 2 tbsp sliced red onion Optional
Cook pasta until al dente, drain, and cool completely.
Slice strawberries and wash spinach.
Whisk olive oil, balsamic vinegar, honey, salt, and pepper.
In a bowl, combine pasta, strawberries, and spinach.
Add goat cheese and optional toppings.
Drizzle dressing, toss gently, and serve.
