  • 1 –2 tablespoons oil vegetable or olive oil
  • 1 teaspoon soy sauce for seasoning the eggs, optional
  • Salt and black pepper to taste

  • ¼ cup cheese shredded mozzarella or cheddar
  • ½ cup protein cooked chicken, shrimp, tofu, or ham, chopped
  • 1 tablespoon herbs fresh cilantro, parsley, or green onions, chopped
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili flakes or paprika optional, for extra heat
