  • 6 sweet potatoes
  • 1 20 ounce can crushed pineapple
  • 1 cup packed brown sugar
  • 1 pinch ground cinnamon
  • 1 pinch ground ginger

Instructions
 

  • First, preheat your oven and bake the sweet potatoes until tender. This helps them to mash more easily later.
  • Next, in a large mixing bowl, combine the cooked sweet potatoes with the crushed pineapple. This brings the two sweet fillings together.
  • Also stir in the brown sugar to both sweeten and help caramelize the dish during baking.
  • Add the cinnamon and ginger, which will gently spice up the flavors.
  • Optionally, you could mix in some pecans at this stage for a crunchy texture contrast, if desired.
  • Once the ingredients are thoroughly combined, transfer the mixture into a baking dish so it’s ready for the oven.
