- 2 cups peeled and sliced fresh peaches or 1 (29 oz can of sliced peaches, undrained)
- 3/4 cup granulated sugar divided
- 1/4 cup water
- 1/4 cup unsalted butter melted
- 3/4 cup self-rising flour
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 3/4 cup milk
- Ground cinnamon or pumpkin pie spice optional
Prepare the Peaches:
If you're using fresh peaches, start by peeling, pitting, and slicing them.
Place the peach slices in a saucepan with 1/2 cup of sugar and the water.
Bring the mixture to a boil, then lower the heat and let it simmer for 10 minutes, stirring occasionally.
Take the saucepan off the heat and set it aside.
Make the Cobbler Topping:
In a medium bowl, combine the remaining 1/4 cup of sugar, flour, and salt.
Add the vanilla extract and milk, stirring until you have a smooth batter.
Assemble the Cobbler:
Pour the batter over the melted butter in the baking dish without stirring.
Spoon the peach mixture and its juices evenly over the batter, again without stirring.
Bake:
Bake the cobbler for 30-35 minutes until the top is golden brown and the edges are bubbling.
