Ingredients
  

  • 2 cups peeled and sliced fresh peaches or 1 (29 oz can of sliced peaches, undrained)
  • 3/4 cup granulated sugar divided
  • 1/4 cup water
  • 1/4 cup unsalted butter melted
  • 3/4 cup self-rising flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 3/4 cup milk
  • Ground cinnamon or pumpkin pie spice optional

Instructions
 

Prepare the Peaches:

  • If you're using fresh peaches, start by peeling, pitting, and slicing them.
  • Place the peach slices in a saucepan with 1/2 cup of sugar and the water.
  • Bring the mixture to a boil, then lower the heat and let it simmer for 10 minutes, stirring occasionally.
  • Take the saucepan off the heat and set it aside.

Preheat the Oven:

  • Set your oven to 350°F (175°C).
  • Pour the melted butter into a 9x13 inch baking dish and tilt the dish to spread the butter evenly across the bottom.

Make the Cobbler Topping:

  • In a medium bowl, combine the remaining 1/4 cup of sugar, flour, and salt.
  • Add the vanilla extract and milk, stirring until you have a smooth batter.

Assemble the Cobbler:

  • Pour the batter over the melted butter in the baking dish without stirring.
  • Spoon the peach mixture and its juices evenly over the batter, again without stirring.

Bake:

  • Bake the cobbler for 30-35 minutes until the top is golden brown and the edges are bubbling.
  • If you like, sprinkle some cinnamon or pumpkin pie spice on top before baking.

Broil (Optional):

  • For a crispier topping, place the cobbler under the broiler for 2-3 minutes, keeping a close watch to prevent burning.

Serve:

  • Allow the cobbler to cool for 5-10 minutes before serving.
  • Enjoy it warm, ideally with a scoop of vanilla ice cream.
