Grilled Corn & Zucchini Salad

Summer is here, which means salad season is officially on. And when it comes to salads, you don’t just get great taste you also get a healthy boost.

Ingredients
  

  • 2–3 ears fresh corn husked
  • 2 medium zucchinis sliced lengthwise
  • 1 ripe avocado
  • 2 cups arugula or spinach
  • 2–3 green onions sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • Heat grill or grill pan over medium-high and brush corn and zucchini with olive oil.
  • Grill corn until charred, about 8–10 minutes, then cut kernels off the cob.
  • Grill zucchini slices 3–4 minutes per side until tender; cut into bite-sized pieces.
  • Wash and dry greens; slice avocado.
  • Combine greens, grilled corn, zucchini, avocado, and green onions in a bowl.
  • Drizzle with lemon juice and olive oil, season with salt and pepper, and toss gently. Serve immediately.
