Ingredients
  

  • 4 tablespoons unsalted butter or ghee
  • 1 tablespoon olive oil
  • 1/2 onion
  • 1/2 head cauliflower
  • 1 pound 500 g mushrooms
  • 2 tablespoons low sodium vegetable stock
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley
  • 4 cloves garlic
  • 1/2 teaspoon salt and pepper

Instructions
 

  • Sauté the Onion and Mushrooms: In a large pan, heat 4 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat. Add the chopped onion and sauté until softened, about 3 minutes. Then, add the cleaned mushrooms and cook for 4-5 minutes until they start to brown, which will boost the flavor of the dish.
  • Cook the Cauliflower: Add the cauliflower florets to the pan. Stir them occasionally and allow them to cook for 8-10 minutes until they become golden and crisp around the edges. This step gives the cauliflower a nutty flavor and texture.
  • Add Vegetable Stock: Pour in the vegetable stock and cook for an additional 2 minutes to allow it to reduce and deepen the flavor of the dish.
  • Add Aromatics: Add the minced garlic, fresh thyme, and some fresh parsley to the pan. Let the aromatics cook for another 30 seconds to bloom and release their fragrance.
  • Season and Garnish: Season the dish with salt and pepper to taste, ensuring the flavors are well balanced. Garnish with the remaining fresh parsley to add brightness and color before serving.

Notes
