Ingredients
  

  • 8 oz short pasta such as rotini or penne
  • 1 large cucumber chopped
  • cups cherry or grape tomatoes halved
  • ¾ –1 cup crumbled feta cheese
  • ¼ small red onion thinly sliced
  • ½ cup Kalamata olives pitted and sliced
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • ¼ cup extra-virgin olive oil
  • 1 small garlic clove minced
  • 1 tsp dried oregano
  • 2 tbsp chopped fresh parsley or dill
  • ½ tsp black pepper
  • Salt to taste

Instructions
 

  • Cook pasta in salted water until al dente. Drain and rinse briefly with cool water.
  • Chop the cucumber and tomatoes, then slice the red onion and olives.
  • Whisk olive oil, lemon juice, red wine vinegar, garlic, oregano, pepper, and a little salt.
  • Combine cooled pasta, vegetables, olives, and herbs in a large bowl.
  • Pour over the dressing and gently toss. Fold in the feta without crushing it.
  • Chill for 20–30 minutes, then taste and adjust seasoning before serving.
