  • 1 8.5 oz box Jiffy Corn Muffin Mix
  • 1 15 oz can whole kernel corn, drained
  • 1 15 oz can creamed corn
  • 1 cup sour cream
  • 1/2 cup 1 stick unsalted butter, melted
  • 2 large eggs

Optional Add-Ins:

  • 1 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick cooking spray to prevent sticking.

Step 2: Mix the Batter

  • In a large mixing bowl, whisk together the Jiffy Corn Muffin Mix, whole kernel corn, creamed corn, sour cream, melted butter, and eggs.
  • If using, stir in the shredded cheddar cheese, salt, black pepper, and garlic powder for extra flavor.
  • Mix everything until just combined—do not overmix, as this can make the casserole dense.

Step 3: Transfer to Baking Dish

  • Pour the batter into the prepared baking dish and spread it evenly with a spatula.

Step 4: Bake the Casserole

  • Place the dish in the preheated oven and bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • If adding extra cheese on top, sprinkle it over the casserole during the last 10 minutes of baking.

Notes
