Main Ingredients:
- 1 8.5 oz box Jiffy Corn Muffin Mix
- 1 15 oz can whole kernel corn, drained
- 1 15 oz can creamed corn
- 1 cup sour cream
- 1/2 cup 1 stick unsalted butter, melted
- 2 large eggs
Optional Add-Ins:
- 1 cup shredded cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
Step 2: Mix the Batter
In a large mixing bowl, whisk together the Jiffy Corn Muffin Mix, whole kernel corn, creamed corn, sour cream, melted butter, and eggs.
If using, stir in the shredded cheddar cheese, salt, black pepper, and garlic powder for extra flavor.
Mix everything until just combined—do not overmix, as this can make the casserole dense.
Step 3: Transfer to Baking Dish
Step 4: Bake the Casserole
Place the dish in the preheated oven and bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
If adding extra cheese on top, sprinkle it over the casserole during the last 10 minutes of baking.
For a softer, spoonable texture: Add an extra ¼ cup sour cream or heavy cream for a richer, creamier consistency.
For a firmer texture: Bake the casserole for an additional 5-10 minutes, or use only one egg instead of two.
For a crispier top: Brush a little melted butter on top during the last 10 minutes of baking.
