- 2 medium tomatoes diced
- 1 large avocado diced
- ¼ cup red onion finely chopped
- 2 tbsp fresh cilantro or parsley chopped
- 2 tbsp olive oil
- 1–2 tbsp fresh lime juice
- ½ tsp salt
- ¼ tsp black pepper
Add corn kernels, diced tomatoes, avocado, and chopped red onion to a large bowl.
