Ingredients
  

  • 2 cups corn kernels fresh or frozen
  • 2 medium tomatoes diced
  • 1 large avocado diced
  • ¼ cup red onion finely chopped
  • 2 tbsp fresh cilantro or parsley chopped
  • 2 tbsp olive oil
  • 1–2 tbsp fresh lime juice
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Add corn kernels, diced tomatoes, avocado, and chopped red onion to a large bowl.
  • Sprinkle chopped herbs over the salad.
  • Drizzle olive oil and fresh lime juice on top.
  • Season with salt and black pepper.
  • Toss gently until everything is combined.
  • Serve immediately and enjoy fresh.
