  • Add Eggs & Vanilla – Beat in the eggs, one at a time, then stir in the vanilla extract. If using espresso powder, mix it in at this stage.
  • Incorporate Dry Ingredients – Gradually add the dry ingredients into the wet mixture, mixing with a spatula or wooden spoon until fully combined. The dough will be thick and sticky.
  • Fold in Chocolate Chips – If using, gently mix in the chocolate chips.

  • Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight. Chilling helps firm up the dough, making it easier to handle and ensuring the cookies don’t spread too much while baking.
