- 1–2 medium red onions thinly sliced
- 3–4 garlic cloves
- 2–3 chipotle peppers in adobo
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp oregano
- 8-10 small corn tortillas
- Guacamole optional
- Crumbled cotija cheese
- Fresh lime wedges
