Ingredients
  

  • 1 tablespoon vegetable oil
  • 1 lb ground chicken
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 12 taco shells
  • 3 ounces chorizo sausages chopped
  • 3 scallions chopped
  • Salt & freshly ground black pepper to taste
  • 2 tomatoes chopped
  • 1/2 head iceberg lettuce shredded
  • 2 cups grated cheddar cheese

Instructions
 

  • Cook the Ground Chicken: In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is hot, add 1 lb of ground chicken to the skillet. Season the chicken with 1 teaspoon salt and 1 teaspoon ground cumin to enhance flavor.Use a spatula to break up the chicken into small crumbles as it cooks. Stir occasionally until the chicken is fully cooked and browned, about 5-7 minutes.
  • Cook the Chorizo and Scallions: While the chicken cooks, preheat your oven to the temperature indicated on the taco shell package, and warm the taco shells as directed. Once the ground chicken is cooked through, add 3 ounces chopped chorizo and 3 chopped scallions to the skillet with the chicken.Stir regularly and cook for 2-3 minutes until the chorizo begins to brown and the scallions soften, infusing the chicken with rich, spicy flavors.
  • Season the Mixture: After the chorizo and scallions have cooked with the chicken, season the mixture with more salt and freshly ground black pepper to taste. Stir to combine all the ingredients and ensure the seasoning is well distributed.
  • Assemble the Tacos: Once the taco shells are warm and the filling is ready, start assembling your tacos. Spoon the chicken-chorizo mixture into each warm taco shell. Top each taco with chopped tomatoes, shredded iceberg lettuce, and grated cheddar cheese. You can adjust the toppings according to your preferences or add some extra ingredients like sour cream or salsa for additional flavor.
