BLT Pasta Salad

If you love the classic bacon, lettuce, and tomato combo but want something a little more filling, this BLT pasta salad is exactly what you need.

Ingredients
  

  • 3 cups uncooked rotini or penne pasta
  • 6–8 slices thick-cut bacon
  • 2 cups chopped romaine or iceberg lettuce
  • 1 cup cherry tomatoes halved
  • ½ cup mayonnaise
  • ¼ cup finely chopped red onion optional
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions
 

  • Cook pasta in salted boiling water until al dente; drain and rinse under cold water.
  • Fry bacon until crispy; drain and chop into pieces.
  • Chop lettuce, halve tomatoes, and dice onion if using.
  • Whisk mayo, smoked paprika, salt, and pepper; toss with pasta, veggies, and bacon.
  • Chill 20–30 minutes in the fridge before serving.
  • Garnish with parsley or chives and enjoy the cold.
