- 3 cups uncooked rotini or penne pasta
- 6–8 slices thick-cut bacon
- 2 cups chopped romaine or iceberg lettuce
- 1 cup cherry tomatoes halved
- ½ cup mayonnaise
- ¼ cup finely chopped red onion optional
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley or chives for garnish
Cook pasta in salted boiling water until al dente; drain and rinse under cold water.
Fry bacon until crispy; drain and chop into pieces.
Chop lettuce, halve tomatoes, and dice onion if using.
Whisk mayo, smoked paprika, salt, and pepper; toss with pasta, veggies, and bacon.
Chill 20–30 minutes in the fridge before serving.
Garnish with parsley or chives and enjoy the cold.
