Ingredients
  

  • 1 cup unsweetened applesauce
  • 1½ cups finely milled white rice flour
  • ½ cup almond flour
  • 2 large eggs
  • ¼ cup neutral oil
  • ¼ cup milk or unsweetened dairy-free milk
  • 1½ teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup chopped walnuts pecans, raisins, or finely diced apple (optional)

Instructions
 

  • Preheat: Heat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
  • Mix dry ingredients: Whisk together rice flour, almond flour, cinnamon, baking powder, baking soda, and salt.
  • Mix wet ingredients: In another bowl, whisk applesauce, eggs, oil, milk, and vanilla until smooth.
  • Combine: Add the dry ingredients to the wet ingredients and gently stir just until combined. Fold in any optional add-ins.
  • Fill and bake: Divide the batter between the muffin cups, filling each about three-quarters full. Bake for 18–22 minutes, until lightly golden and a toothpick comes out clean or with a few moist crumbs.
  • Cool: Rest the muffins in the pan for 5 minutes, then transfer to a wire rack and cool before serving.
