- 1 cup apple cider
- 1½ cups gluten-free all-purpose flour blend with xanthan gum
- ½ cup unsweetened applesauce
- ½ cup packed light brown sugar
- 1 large egg
- 4 tablespoons unsalted butter melted, plus more for coating
- 1 teaspoon vanilla extract
- 1½ teaspoons ground cinnamon divided
- ¼ teaspoon ground nutmeg
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- ¼ cup granulated sugar
Reduce the cider: Simmer 1 cup apple cider in a saucepan over medium heat until reduced to about ½ cup. Cool until warm.
Prepare the batter: Preheat oven to 350°F (175°C) and grease a donut pan. Whisk together gluten-free flour, baking powder, 1 teaspoon cinnamon, nutmeg, and salt.
